LEMON GLAZE CHICKEN | |
2 tsp. coriander 1 tsp. sage 1/2 tsp. salt 1/2 tsp. pepper 1-3 lb. chicken, cut in pieces 1/4 c. lemon juice 1/4 c. white vinegar 1/4 c. & 2 tbsp. sugar 1/4 tsp. grated lemon peel 1 tbsp. & 1 tsp. cornstarch 2 tbsp. water Combine coriander, sage, salt and pepper. Rub over chicken. Combine lemon juice, vinegar, sugar, lemon peel, cornstarch and water in small saucepan. Bring to boiling, stirring constantly 1-2 minutes until thickens. Remove 1/2 of sauce for basting. Bake 30-40 minutes at 350 degrees brushing often. Serve with sauce. |

Works beautifully on leg quarters if you are cooking for a group. I multiplied the recipe by 5 using about 12lbs of leg quarters and 10lbs of boneless breast and had plenty of glaze to go around - use deep foil roasting pans and brush after you add the glaze to smooth out the spices
