LEMON GLAZE CHICKEN 
2 tsp. coriander
1 tsp. sage
1/2 tsp. salt
1/2 tsp. pepper
1-3 lb. chicken, cut in pieces
1/4 c. lemon juice
1/4 c. white vinegar
1/4 c. & 2 tbsp. sugar
1/4 tsp. grated lemon peel
1 tbsp. & 1 tsp. cornstarch
2 tbsp. water

Combine coriander, sage, salt and pepper. Rub over chicken. Combine lemon juice, vinegar, sugar, lemon peel, cornstarch and water in small saucepan. Bring to boiling, stirring constantly 1-2 minutes until thickens. Remove 1/2 of sauce for basting. Bake 30-40 minutes at 350 degrees brushing often. Serve with sauce.

Great tasting glaze - but... make sure you mix your corn starch with cold water into a smooth, lump free slurry with a fork or small wisk before adding it to the boiling mixture - when adding, do so gradually stirring constantly... If you follow the instructions above to the "T", you will end up with clumps of corn starch in the glaze... not very appealing.

Works beautifully on leg quarters if you are cooking for a group. I multiplied the recipe by 5 using about 12lbs of leg quarters and 10lbs of boneless breast and had plenty of glaze to go around - use deep foil roasting pans and brush after you add the glaze to smooth out the spices

You will make many friends with this one.. definitely a keeper!
