STUFFED GROUND TURKEY ROLL
1 lb. ground turkey
1/4 c. seasoned bread crumbs
1/3 c. green onions, finely chopped
2 tbsp. fresh parsley, chopped
1 tsp. fresh tarragon leaves, chopped
2 tbsp. catsup
1 egg
1 tsp. fresh thyme leaves, chopped
1/2 tsp. dry mustard
1/4 tsp. white pepper
1 c. fresh broccoli, finely chopped
1/2 c. fresh mushrooms, finely chopped
1/2 c. yellow Bell pepper, finely chopped
1/2 tbsp. Polander's chopped garlic

In large mixing bowl, combine turkey, bread crumbs, green onions, parsley, tarragon, egg, catsup, thyme, mustard and white pepper and mix well. Lay a piece of wax paper on counter. Place meat mixture in middle of wax paper and pat down to form an 8 inch square. Set aside. In steamer bowl, place broccoli, mushroom and Bell pepper and microwave for 3 minutes on high. Drain well. Add garlic to vegetable mixture and stir well. Spoon vegetable mixture onto turkey to within 1 inch from all sides. Roll turkey, beginning at one end by lifting the plastic wrap until turkey begins to roll tightly. Peel plastic wrap away as turkey rolls to the other end. Place turkey roll in a baking pan and place in a preheated 350 degree oven and bake for 35 to 40 minutes covered. Uncover and continue to bake for an additional 10 minutes to brown. Slice and serve.

Since microwave ovens vary in power, you may need to adjust your cooking time.
