CLASSIC WHITE BEAN AND TUNA
SALAD
 
1 can White Albacore tuna
1 med. red onion
1 can cannelloni beans
2 med. firm ripe tomatoes, seeded and cut into chunks
1 clove finely minced garlic
1/4 c. extra virgin olive oil
1/8 c. Balsamic vinegar
Salt and pepper

In a large bowl place all ingredients and gently toss. Generously season with salt and pepper. Let salad "rest" for a short period of time to let the flavors melt together. Serve with fresh crusty Italian bread.

Simple, easy, and healthy! One of my go-to recipes for summer! I use a can of the regular tuna in roasted garlic olive-oil and a regular-sized container of cherry tomatoes sliced in half. :)

Good recipe, very tasty dressing. I omit the tomatoes as they boost the "fishy" flavor of the tuna, which I don't enjoy. If you like the taste of fish, then use the tomatoes.
