SWEDISH PANCAKES 
2 eggs, beaten
2 c. milk
2 tbsp. melted butter
1 c. sifted flour
1/4 tsp. salt
1/4 tsp. sugar

Combine eggs, milk and butter; beat well. Add dry ingredients gradually, beating constantly during addition. Pour 3 tablespoons batter for each cake onto hot griddle and bake until top is bubbly and edges look cooked. Turn and cook other side. Fill with jelly, preserves or fruit. Roll in confectioners' sugar or serve plain with butter and syrup.
