BROWN SUGAR PUMPKIN BREAD | |
3 1/2 c. flour 3 c. light brown sugar 2 tsp. baking soda 1 1/2 tsp. salt 1 tsp. cinnamon 1 tsp. nutmeg 1 c. chopped pecans 1 c. vegetable oil 3/4 c. cold water 4 eggs, lightly beaten 2 c. pumpkin In very large bowl, mix first 7 ingredients by hand. In center of mixture, make a well and add remaining ingredients. Stir with spoon until mixed. Beat with electric mixer until smooth. Bake in greased and floured loaf pans (2 large or 3 small) at 350 degrees for 45-60 minutes (test). Cool 15 minutes in pan. Wrap in aluminum foil while warm. Refrigerate at least 24 hours before serving. |
