CHEESY BROCCOLI CASSEROLE 
2 boxes frozen chopped broccoli, cooked and drained
1/4 lb. Velveeta cheese, cut into chunks
1 stick butter, melted
1 stack Ritz crackers, crushed

Spray 8-inch square baking dish. Place broccoli in dish. Cook cheese and half of butter in saucepan until cheese melts, stirring constantly. Pour over broccoli. Toss crackers with remaining butter in bowl; sprinkle over cheese.

Bake at 350°F for 30 minutes.

Yield: 4 servings.
