EGGPLANT 
Eggplant
It alian bread crumbs
3 eggs
Crisco shortening
Fresh garden tomatoes
Provolone cheese

Peel and slice eggplant (slices should be approximately 1/2 inch thick). Put bread crumbs on a dish, then take about 3 eggs in a bowl and whisk them. Get Crisco very hot. Dip eggplant in eggs, then bread crumbs. Fry until golden brown. Place on brown paper bag and drain. Place fried eggplant slices on foil pizza pan. Place a slice of fresh tomato on each slice of the prepared eggplant. Salt and pepper each piece, then top with a slice of Provolone cheese. Broil just until cheese begins to brown.
