CARROT LOAF 
2 c. white sugar
3 c. flour
2 c. grated carrots
4 eggs
1/4 tsp. baking soda
1/4 tsp. salt
3 tsp. baking powder
1 c. oil
1 tsp. vanilla
1/2 c. chopped nuts (optional)

Add dry ingredients alternately with oil and slightly beaten eggs, placed in loaf pan (large pan) (or 2 medium pans). Bake 40 minutes at 325 degrees.

Remove from oven and quickly add topping:

2 tbsp. melted butter
1/2 c. brown sugar
2 tsp. milk
1/4 c. chopped nuts

Mix together. Add topping to loaf. Return to oven and broil until bubbly. Watch carefully so you don't scorch topping.
