GOLDEN BANANA MUFFINS 
1/2 c. butter
1 c. sugar
2 eggs
1 c. mashed banana
1/2 c. sour milk
2 c. flour
1 tsp. baking soda
1/2 tsp. salt
1 c. chopped apple
2 c. Rice Chex or Rice Krispies (divide for top)

TOPPING:

3/4 c. chopped nuts
2 tbsp. brown sugar
2 tbsp. melted butter

Preheat oven to 350 degrees. Grease muffin pans well. Cream butter and sugar. Add egg, banana, and milk - at this time I add 1 cup finely chopped apple (this is optional). Mix well. Mix together flour, baking soda, and salt; add to creamed mixture. Stir in 3/4 cup crushed cereal and 1/2 cup nuts. Put in muffin tins or loaf pan. Combine remaining cereal, nuts, brown sugar, and butter; sprinkle over tops. Bake until inserted tester is clean - 25 to 30 minutes for muffins; 55 to 60 minutes for loaf.
