ORANGE BREAD 
1 pkg. dry yeast
1/4 c. warmed orange juice
1 c. sm. curd cottage cheese
Artificial sweetener equal to 2 tbsp. sugar
1 tsp. cinnamon
1 tsp. salt
1/4 tsp. baking soda
2 tbsp. grated orange peel
1 tsp. vanilla extract
1 lightly beaten egg
2 c. all-purpose flour

Soften yeast in 1/4 cup warm orange juice. Warm cottage cheese in saucepan. Add yeast and juice to warm cheese. Add all ingredients except flour and mix well. Add the flour, a little at a time, mixing well. Cover and allow to stand at room temperature for several hours, or until the bulk doubles.

Stir dough until again reduced to original size and put in well-oiled, standard sized loaf pan. Cover the pan and allow the dough to again double in bulk. Bake in 350 degree oven for 40 minutes.

This bread is delicious right from the oven. It is much easier to slice when cool. Wrap sliced bread in foil and store in the refrigerator until ready to use.
