ICED MEAT LOAF 
1 lb. ground beef
1 egg
1/2 c. cracker crumbs
2 tbsp. instant minced onion
1 tsp. Worcestershire sauce
1 tsp. lemon pepper or plain pepper

Mix all ingredients thoroughly. Turn into loaf pan. Bake at 350 degrees for 1 hour.

POTATO ICING:

Boil 2 or 3 medium potatoes and mash. OR prepare 2 servings size of instant potatoes. OR heat through 2 servings of leftover mashed potatoes.

Remove baked meat loaf from pan and place on oven-proof platter. Frost loaf with potato icing and bake at 325 degrees for 10 minutes. Place 1 slice of cheese on top of iced loaf and return to oven until cheese melts.
