NEPALESE DOUGHNUTS 
2 c. rice flour
2 tbsp. butter
1 c. sugar (or to your taste)
1/2 tsp. cinnamon
1/2 tsp. cardamom
1/2 tsp. nutmeg
1/4 c. milk
1/4 c. water
Oil for deep frying

Combine ingredients to form dough and leave uncovered overnight (or for 3 or 4 hours). Then add more water to make a thick batter.

Heat about 3 inches oil in a saucepan. Make circle shapes, or drop batter from a spoon into the hot oil to make one doughnut at a time. Cook until golden brown on both sides. It is best to eat hot.

These keep a long time. Reheat in the microwave (for soft) or oven (for crisp) sayls.

Since microwave ovens vary in power, you may need to adjust your cooking time.
