TARR'S ACCORDION POTATOES 
4 large potatoes
2 tbsp. melted butter or olive oil
2 tsp. Italian seasoning or what you like
1/2 cup shredded cheese
salt and pepper, to taste
sausage, sliced thin
1 bell pepper, sliced lengthwise, sautéed for 3 minutes
1 onion, sliced lengthwise, sautéed for 3 minutes

Preheat oven to 375°F. Wash potatoes, pat dry. Coat with butter or oil, seasoning and salt and pepper sprinkled between slices. Stuff with sausage, bell peppers and onions between slices. Drizzle butter or oil over top. Put on shallow baking sheet. Bake at 375°F for 45 minutes.

Hi, your recipe sounds intriguing. However, I would like to have your instructions on how exactly to slice the potatoes... all the way thru into individual slices and pushed together? 3/4 way thru and bent? How thick should the slices be? Thanks.

I'm going to try this with 3/4 of the way thru sliced potato, since that fits the "accordion" description. One stuffed potato per person, or two if you are hungry (like I am!)
