FRESH APPLE CAKE 
4 c. peeled and chopped apples
2 c. sugar
2 eggs
1/2 c. oil
2 tsp. vanilla
2 c. flour
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
3 tbsp. chopped pecans
1/2 c. raisins (optional)
Sauce (recipe follows)

Grease and flour a 9-inch tube pan or 9x13 inch baking dish. Preheat oven to 350 degrees.

Combine apples and sugar in a bowl; set aside. Beat eggs lightly; beat in oil and vanilla. Stir together flour, baking soda, cinnamon and salt. Add to egg mixture alternately with apple mixture. Stir in nuts and raisins.

Spoon mixture into prepared pan. Bake in 350 degree oven 60 minutes or until a pick inserted into the center comes out clean. Remove from oven. Pour hot sauce over cake.

SAUCE FOR APPLE CAKE:

1/2 c. brown sugar
1/2 c. granulated sugar
2 tbsp. flour
1 c. water
1/4 to 1/2 c. butter
1 tsp. vanilla
1/2 c. chopped pecans (optional)

In a saucepan, cook together sugars, flour and water until the mixture is clear. Add butter and vanilla; stir until butter melts. Pour hot sauce over hot cake as soon as it comes out of the oven.
