RICE PUDDING 
1/2 c. rice
2 c. evaporated milk
2 c. hot water
1/2 c. sugar
1/4 tsp. nutmeg
1/2 tsp. salt

Combine above ingredients in microwave-safe bowl. Cover and simmer for approximately 30 minutes in microwave until liquid is almost absorbed by rice. Stir 2 to 3 times during cooking time. Or cover and simmer in double boiler for approximately 2 hours, stirring occasionally.

Since microwave ovens vary in power, you may need to adjust your cooking time.
