SALMON LOAF 
2 c. canned salmon
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. minced onion
1 1/2 c. soft bread crumbs
1 egg
1 c. milk
1 tbsp. lemon juice
1 tbsp. butter
2 tbsp. minced parsley

Put salmon, liquid, seasonings and bread crumbs in a large mixing bowl. In a small dish, beat egg into milk and then add to mixture. Stir in lemon juice. Lightly grease a loaf pan with butter and pack in salmon mixture, but do not press down hard. Dot top of loaf with butter. Bake loaf 30 minutes or until top is browned. If desired may be served with tomato sauce. Also delicious cold. I have also used tuna in this recipe.
