SWEET POTATO CASSEROLE 
3 c. mashed sweet potatoes
1 c. evaporated milk
2 eggs
1 tsp. vanilla
1/2 tsp. cinnamon
1/2 tsp. nutmeg
3/4 stick butter
1 1/2 c. sugar

Mix above well with mixer. Pour into large baking dish and bake at 425 degrees for 15 minutes. Remove from oven.

TOPPING:

1 c. crushed corn flakes (plain)
1/2 c. brown sugar (packed)
3/4 stick butter
1/2 c. chopped pecans

Melt butter. Add sugar, nuts and corn flakes. Mix well. Sprinkle evenly over potatoes. Bake an additional 15 minutes at 400 degrees.

I always use fresh sweet potatoes. Peel and cook, then mash. Takes at least one pound.
