HAM LOAF
1 1/2 lb. lean ground beef
1 lb. ground smoked ham
2 eggs, well beaten
2 c. milk
1 tbsp. minced onion
1/2 c. tapioca
1/4 tsp. pepper
1/2 tsp. salt

Mix meat well, add rest of ingredients in order as given. Mix well and shape in loaf. Place in shallow pan with space around loaf for sauce. Pour sauce over loaf and bake 1 1/2 to 2 hours at 350 degrees. Baste often. Serves 10 to 12.

SAUCE:

1/2 c. water
1/2 c. vinegar
3/4 c. brown sugar
1 tsp. ground mustard

Bring sauce to boil before pouring over loaf.

NOTE: This can be baked in a pan large enough to flatten meat, pour over all the sauce eliminating the basting and meat does not get a crust. If meat is very fat, that may need to be drained off as soon as loaf is baked. If you wish all ham may be used (fresh ground ham and cured ham), but ground beef does not change the flavor.
