ALMOND PIE (PECAN) 
2 2/3 c. flour
1 1/3 c. sugar
2 1/2 sticks plus 1 tbsp. butter, softened
1 egg
1 c. almonds (may substitute pecans)
1 egg
1/2 c. sugar
1 tsp. lemon juice

Mix together first 4 ingredients with your hands. Chill. Separate into halves, press half into the bottom of a springform pan. Mix the last 4 ingredients together and spread on the crust. Press the remaining crust into the springform pan on top of the filling. Bake at 325 degrees for 45-55 minutes. Cut into 14 pie shaped wedges.
