TORTILLA STACKS 
1 1/2 lb. ground beef
1 to 1 1/2 oz. taco sauce mix
Salt
1 (1 lb.) can tomatoes, cut up
1 (8 oz.) can tomato sauce
1/2 c. water
1 lb. Ricotta cheese
2 eggs, lightly beaten
8 corn tortillas
1 lb. Monterey Jack cheese, grated

Preheat oven to 350 degrees. Brown beef, add taco sauce mix, salt, cut up tomatoes, and tomato sauce and 1/2 cup water. Simmer 10 minutes.

In bowl, combine Ricotta cheese with eggs. In flat baking dish (12 x 8 x 2 inch) place enough meat mixture to cover bottom of pan. Place 2 tortillas over the meat side by side. Spoon Ricotta mix on top of each, layer more meat and sprinkle with cheese. Repeat until each stack has 4 tortillas, ending with grated cheese. Bake 30 minutes. Let stand for 5 minutes.

Excellent family dinner. Easy to prepare. Serves 8.
