ROLL YOUR OWN MANICOTTI | |
1/2 lb. lasagna noodles 1 lb. cottage cheese 1/4 lb. mozzarella, shredded 1/4 c. bread crumbs 1/4 tsp. salt 1 tbsp. parsley, dried 1 egg, slightly beaten 1/4 c. grated Parmesan cheese 1 box frozen chopped spinach 16 oz. spaghetti sauce Mix cottage cheese, mozzarella, crumbs, salt, parsley, egg and well drained spinach. Cook noodles, drain and cut in half. Spoon cheese mixture onto noodles and roll up. Pour 1/2 sauce into pan (9 x 13 inch). Arrange roll - ups in a single layer. Top with remaining sauce, sprinkle with Parmesan and bake at 375 degrees for 20-30 minutes until hot. |
