MEXICAN MEATLOAF 
1 c. chopped onions
1 c. chopped red and green peppers, mixed
2 cloves garlic minced
1 pkg. Weight Watchers beef broth
1 lb. ground turkey
4 oz. cheddar cheese, grated (if not using low cal. reduce to 3 oz.)
3/4 c. bread crumbs (4 skinny bread slices)
1/2 c. tomato sauce
1/4 c. plain yogurt
1 c. grated carrots
1/2 c. sliced celery
2 tbsp. chopped parsley
2 tsp. Worcestershire sauce
1 tsp. chili powder
Salt and pepper to taste
Chives (optional)

Mix all ingredients. Bake 40-60 minutes at 350 degrees.
