1 c. white sugar
1 c. butter
1 egg
2 c. flour
1 c. coconut
1 c. brown sugar
1 tsp. vanilla
1 c. instant potato flakes
1 tsp. baking soda

Mix all ingredients; drop by teaspoon 1 inch size. Flatten with glass dipped in sugar. Bake at 350 degrees for 10 minutes.
