Mock Macaroon Cookies - Recipe

MOCK MACAROON COOKIES

Cream together:

1 c. sugar
1 stick butter

Add:

1 beaten egg
1 1/4 c. Bisquick
1 1/2 c. instant potato flakes

Mix well and add:

1 tsp. coconut flavoring
1/2 c. coconut

Drop by teaspoonful on cookie sheet. Bake at 375 degrees for 10-12 minutes.
