BISCOTTI 
6 eggs
1 1/2 c. sugar
1 stick melted butter and 1/2 cup oil
7 c. flour
4 tsp. baking powder
3 tsp. anise extract
1/2 c. chopped nuts

Beat eggs, add sugar, shortening, and extract. Add flour, baking powder and nuts. Divide into 8 balls (8 oz. each). Roll into long roll onto a cookie sheet. Bake at 350 degrees for 30 minutes until slightly brown. Cut on diagonal, put back in oven until toasty brown (about 20 to 30 minutes).
