MICROWAVE CHILI CHEESE DIP 
3/4 c. onion, finely chopped
1 clove garlic, minced or pressed
1 (14 1/2 oz.) can whole, peeled tomatoes, drained
1 (4 oz.) can whole green chili peppers
1/8 to 1/4 tsp. cayenne pepper
12 oz. mild cheddar cheese, grated
Tortillas or corn chips, for serving

In a 1 1/2 quart microwave dish combine onion and garlic. Chop tomatoes and drain out excess liquid. Add to onion mixture. Cut chilies in half crosswise. Slice into 1/4 inch strips. Add to mixture. Microwave at HIGH power for 4-6 minutes or until onion is soft. Stir in cayenne pepper and cheese. Microwave at MEDIUM power for 2-4 minutes, or until cheese is melted, stirring every minute. Do not let cheese boil. Scoop up warm cheese dip with tortilla or corn chips. If cheese begins to cool and harden, reheat mixture in microwave at MEDIUM HIGH power for 1-2 minutes. Makes 4-6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
