MEXICAN SALAD 
1 sm. head lettuce
2 lg. oranges, pared & sectioned, or 1 can (11 oz.) mandarin orange segments, drained
1 cucumber, sliced
1 sm. onion, thinly sliced & separated into rings
2 tbsp. chopped red chilies or pimentos
1/2 tsp. chili powder
Chili Dressing (below)

Coarsely shred lettuce. Toss lettuce and remaining ingredients except Chili Dressing in large bowl. Spoon 2 tablespoons dressing onto each serving. 8 servings.

CHILI DRESSING:

1 c. plain nonfat yogurt
1 tbsp. chili sauce
1/4 tsp. onion powder
1/4 tsp. salt

Mix all ingredients.
