CORN DOGS 
1 lb. hot dogs
Vegetable oil
1 c. flour
2 tbsp. cornmeal
1 1/2 tsp. baking powder
1/2 tsp. salt
3 tbsp. shortening
3/4 c. milk
1 egg, beaten
1 med. onion, grated; optional

Pat hot dogs dry. Heat 2-3 inches oil in deep fryer to 365 degrees. Mix flour, cornmeal, baking powder and salt. Cut in shortening. Stir in remaining ingredients. Dip hot dogs into batter; drip off excess. Fry about 6 minutes, turning once, until brown; drain. Insert wooden skewer in end of each hot dog. 8-10 servings.
