FRIED RICE 
1 sm. chopped onion
1 box (10 oz.) frozen carrots, pea mixture
1/2 lb. cleaned shrimp
6-8 c. cooked rice
3 tbsp. soy sauce
Salt seasoning to taste
1/2 c. vegetable oil

Cook onion until light brown. Add vegetable mixture. Cover 3-4 minutes. Add shrimp, cover for 4 more minutes. Then add rice, soy sauce, salt and seasonings. Use a little more oil if necessary. Mix together and serve warm or chilled.
