CAULIFLOWER CASSEROLE 
Fresh Cauliflower (or 2 pkgs. frozen)
1 cup cheddar cheese, shredded
1 (10 oz.) can cream soup (celery or mushroom)
1 cup mayonnaise
2 eggs, beaten
1 small onion, grated
1/2 to 3/4 cup cracker crumbs

Cook cauliflower until tender, crisp. In a large bowl combine the soup, cheese, mayonnaise, eggs, and onions. Carefully fold in the cauliflower. Pour into a buttered casserole or baking dish. Sprinkle cracker crumbs on top.

Bake at 400°F for 20 to 30 minutes.
