ORANGE BLOSSOM CAKES 
Juice and rind of 1 orange, grated
Juice and rind of 1 lemon, grated
3/4 c. granulated sugar
1 box yellow cake mix

Mix orange and lemon mixture with 3/4 cup sugar. Let stand in refrigerator overnight, or longer. Stir from time to time. Keep covered.

Mix 1 box good yellow cake mix according to directions. Bake in miniature muffin pans. Makes about 70 cakes.

Dip hot muffin cakes in syrup as you take them out of pan. Dip bottom of cakes twice. Place cakes on wax paper to cool with tops down. These cakes freeze well. Good in freeze for several weeks.

This recipe makes about 70 small cakes which should not be confused with pastries that may be purchased at the store.
