ORANGE JELLY | |
2 c. prepared orange juice 1 env. (1 oz.) pectin mix 3 c. sugar Combine fresh or canned orange juice or prepared frozen orange concentrate with pectin mix in a 4 quart saucepan or kettle. Measure sugar and set aside. Bring juice and pectin mix to a boil over high heat, stirring constantly. Add sugar and again bring to a boil over high heat. Boil hard for 4 minutes, then remove from the heat, allow to stand 1 minute, then skim and pour at once into hot clean glasses, allowing 1/4 to 1/2 inch of space at the top Cover at once with hot melted paraffin, rolling it around the inside margin of the glass. When cool, cover with loose metal or paper covers. Yield: 5 or 6 ounce glasses. |
