NAVAJO FRY BREAD 
6 c. unsifted flour
1 tbsp. salt
2 tbsp. baking powder
1/2 c. instant non-fat dry milk
6 tbsp. lard

In a bowl, combine flour, salt, baking powder and non-fat milk. Add 6 tablespoons lard with fingers. Add enough lukewarm water (about 2 3/4 cups) to make a soft dough. Knead thoroughly 5 minutes. Pinch off a ball of dough about the size of a large egg. Shape it round and then flatten and make small hole in middle.

Work it back and forth from one hand to the other. Gradually stretching it to a diameter of 9 inches. In a frying pan have 1 inch hot fat, fry to a light brown on one side and turn to fry other side. As it fries, the bread puffs and becomes light and crisp. Drain each piece on a paper towel, serve hot with butter, jam or honey. Makes 18-24 pieces. 9 inches in diameter.
