XEROTIGANA - GREEK NEW YEAR'S
CRISPS
 
The Greeks serve these delicate deep-fried pastries, topped with nuts and a honey syrup, to welcome in the New Year. Yields about 7 dozen.

5 eggs
1 tbsp. olive oil
3 tbsp. orange juice
3 c. all purpose flour

HONEY SYRUP:

2 1/4 c. honey
2 c. water
1/3 c. lemon juice
1 tsp. ground cinnamon
4 c. olive oil for deep frying
Coarsely chopped walnuts for sprinkling on top
Deep fryer or other deep pan for frying

1. In a mixing bowl, beat eggs until light and foamy. Add olive oil, orange juice and flour. Mix thoroughly. Cover and set aside 1 hour.

2. To make honey syrup: In a saucepan combine honey, water, lemon juice and cinnamon. Boil 5 minutes; set aside.

3. Roll out dough to 1/8" thickness. Using a pastry wheel, cut pieces 1"x3". Pinch centers to make "butterfly wings".

4. Heat oil to 375 degrees. Fry a few wings a minute or two until golden brown, turning once. Drain on paper towels. Place a layer of wings on a platter. Spoon some of the honey syrup on wings; sprinkle with a few walnuts. Repeat until all the wings are covered. NOTE: For best flavor, serve a day after making.
