MUSHROOM AND ONION RICE
CASSEROLE
 
2 c. sliced fresh mushrooms
2 c. sliced onions
1/2 c. butter
1 c. beef consomme
1 c. water
1 c. uncooked rice
Salt and pepper to taste

Saute mushrooms and onions in butter, add consomme and water. Add rice, mix well, season with salt and pepper. Taste and adjust seasoning. Transfer to a buttered 2-quart casserole, bake covered 45 minutes at 350 degrees. Serves 6.
