WILD RICE WITH MUSHROOMS AND
ONIONS
 
6 tbsp. butter
1 1/2 c. chopped onion
1 lb. mushrooms, trimmed, cleaned & thinly sliced (about 5 c.)
2 1/2 c. wild rice (about 16 oz.)
6 c. water
2 tsp. salt
1/2 tsp. freshly ground pepper

1. Melt butter in large, heavy saucepan over medium heat. Add onion and cook, stirring frequently, until golden, about 7 minutes. Add mushrooms and cook, stirring frequently. Just until softened, about 3 minutes.

2. Rinse the rice in a strainer under cold running water, stirring it around in strainer for a minute or two. Add rice, water, salt and pepper to the onion mixture in saucepan; stir well. Cover and bring to boiling over medium heat. Lower heat. Simmer uncovered, 45-60 minutes or until rice is tender but still chewy; keep a close watch on the rice to be sure it does not get mushy. Drain excess liquid. Fluff rice with large fork. Correct the seasoning if necessary.
