ZESTY CARROTS 
6 to 8 carrots, sliced and cooked
1/2 c. mayonnaise
2 tbsp. grated onion
1/4 c. liquid from cooked carrots
2 tbsp. horseradish
Salt and pepper to taste
Crushed crackers (Ritz are best)
butter

Arrange sliced, cooked carrots in casserole dish. Combine remaining ingredients, except crackers and butter, and pour over carrots. Top with crushed crackers and dot generously with butter. Bake at 350 degrees for 15 to 20 minutes.
