MERINGUE RICE PUDDING 
1/2 c. rice
1 qt. milk

Cook in double boiler until done.

Beat 3 egg yolks with 1/3 cup sugar, 1/2 teaspoon salt and 1 teaspoon vanilla. Add to cooked rice but remove from heat. Beat egg whites until stiff. Add sugar like for meringue. Pour rice in casserole. Sprinkle with cinnamon, put on egg whites and brown in oven.
