PUMPKIN COOKIES 
2 c. flour
1/2 tsp. salt
1 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. vanilla
1/4 c. butter
3/4 c. shortening
1 c. sugar
1 c. pumpkin
1 egg
1/2 c. chopped pecans
1/2 c. chopped dates

Combine all ingredients. Make into balls and place on lightly greased and floured cookie sheet. Flatten with a fork. Bake at 350 degrees for 10 to 12 minutes.

ICING:

3 tbsp. butter
1/4 c. milk
1/2 c. light brown sugar
1 c. + 2 tbsp. confectioners' sugar
1/2 tsp. vanilla

Prepare icing by boiling butter, milk and sugar for 2 minutes. Cool. Stir in confectioners' sugar, vanilla and beat. Frost cookies.
