This frosting tastes great and it's very creamy and not too sweet. You do, however, need to double it to cover a two layer round cake.

Other than the ratios this is the frosting used on the Red Velvet cake. Very good. When I increased the recipe by half I only increased the fat using butter, and it worked fine. I still keep the original shortening ratios tho. Not sure if it would work with only butter, but it's worth a try.

Great recipe - made gluten and dairy free replacing flour with potato starch, milk with almond milk, shortening with extra virgin coconut oil as I'm not a shortening fan and butter w best life buttery baking sticks!! Turned out wonderful. My sister in law will be so surprised with a birthday cake as her and my DH have celiac and my DH can no longer tolerate any dairy products. Very slight coconut flavor is wonderful!!! Can't wait for cake to cook so I can ice!!

Now my favorite frosting, nice and light but not too sweet. It does work with just butter, but tends to separate a little bit, especially in a warmer kitchen or summer months.
