SEAFOOD CREOLE 
1 lg. green pepper, chopped
1/2 c. chopped onion
1/2 c. minced celery
1 clove garlic, minced
1 (6 oz.) can tomato paste
1 1/2 c. water
1 tsp. salt
1 bay leaf
1/4 tsp. thyme
1/8 tsp. pepper
2 c. cooked shrimp (could use 10 oz. pkg. frozen shrimp, thaw in water)

Cook vegetables in oil until tender. Add tomato paste, water and seasonings. Simmer 15 minutes, stirring occasionally. Add seafood and heat through, about 2 minutes. Serve on hot rice.
