MANICOTTI 
8 eggs
2 c. water
2 c. flour
1 pinch of salt

FILLING:

3 lb. ricotta
1 pkg. Mozzarella
3 eggs
Parsley to taste
Salt and pepper to taste

SHELL: Put all ingredients into blender. Use small crepe pan sprayed with Pam and rubbed with a paper towel. Cook in crepe pan for about 1 minute. Make one at a time. Then mix other ingredients together for filling. Place into shell and fold shell over. This should make 40 manicotti. Bake at 350 degrees for 45 minutes.
