PETITE CHEESECAKES 
2 (8 oz. each) pkg. cream cheese
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
vanilla wafers for crust

Cream together cream cheese and sugar. Beat in other ingredients. Place vanilla wafers in cupcake paper. Fill 2/3 full of cheese mixture.

Bake 350°F for 15-20 minutes. Before serving, add topping, (cherries, strawberries, blueberries, etc.).
