FUNNEL CAKE 
2 eggs
1 1/2 c. milk
2 c. flour
1 tsp. baking powder
1/2 tsp. salt
2 c. oil

Heat oil in iron skillet. Beat 2 eggs and add 1 1/2 cups milk. Mix well. Add flour, baking powder and salt - beat well. Use a small measuring cup to pour batter into skillet by drizzling over oil. Cook 3 minutes, then turn over and cook other side (until light brown). Drain on paper towel and top with powdered sugar or other topping of your choice.
