FUNNEL CAKES 
1 c. self-rising flour
3 tbsp. sugar
1 egg
1 c. milk
1 tsp. vanilla

Mix with blender until smooth and semi-thin consistency. In heavy skillet heat approximately 1 inch of oil to 370 degrees. Pour thin stream of batter into hot oil in zig-zag fashion. Brown 1 side (approximately 15-30 seconds). Turn and brown other side. Drain on paper towel, let cool, and sprinkle with sifted powdered sugar. Makes approximately five 6 inch cakes.
