GROUNDCHERRY JAM | |
4 1/2 c. prepared fruit (1 1/2 qts.) 2 tbsp. lemon juice (1 lemon) 7 c. sugar 1 bottle Certo fruit pectin First prepare fruit. Thoroughly crush ripe berries, one layer at a time. Measure 4 1/2 cups into a very large saucepan. Add lemon juice (and the slices of lemon if you desire), also add the sugar and mix well. Place over high heat, bring to a full rolling boil and boil hard for 1 minute, stirring constantly. Remove from heat and immediately stir in Certo. Skim off foam with a metal spoon. Stir and skim for 5 minutes, to cool slightly. Ladle into glasses. Cover with about 1/8 inch hot paraffin. 3 pints. Be sure and sterilize jars and seal. Use 1/2 or 1 pint jars. |
