Peel plantain and cut into round slices approximately 1/4 of an inch thick. Heat vegetable oil (about 1/2") in frying pan. Burner should be on medium high heat. Place plantain slices in the hot oil and fry until slightly browned. Turn them over and fry other side until slightly browned. Remove plantain slices from frying pan and on a cutting board mash them gently with the underside of a spoon. Do not allow them to tear apart. Replace them in hot oil and fry until both sides are golden brown. Remove from frying pan and salt to taste. Serve them hot.
