CHEESY CHICKEN AND RICE 
4 boneless skinless chicken breasts
1 can condensed chicken broth
2 c. fresh or frozen broccoli flowerets
2 c. white rice (uncooked; not instant)
3/4 lb. Velveeta cheese, cut up

Heat 1 tablespoon oil in skillet. Add chicken; cook until browned. Remove chicken. Add broth, 1/2 cup water and broccoli. Stir. Heat to a boil. Stir in rice and cheese. Top with chicken; cover. Cook on low heat for 5 minutes or until cooked through. Gently stir until cheese is melted.
