DUTCH APPLE PANCAKE | |
4 lg. eggs 3/4 c. milk 3/4 c. all purpose flour 1 tbsp. sugar 1/4 tsp. salt 2 tbsp. butter 2/3 c. sugar 5 lg. apples, pared, cored, sliced 1/4 tsp. cinnamon 1/8 tsp. nutmeg 1/3 c. butter 1 tbsp. lemon juice Mix eggs, milk, flour, 1 tablespoon sugar and salt in medium bowl. (Batter will be thin and slightly lumpy.) Melt 2 tablespoons butter and pour into 10" deep dish pie plate or cast iron fry pan. Bake at 425 degrees for 20 minutes or until crust is browned and pancakes set. (DO NOT OPEN OVEN DOOR WHILE BAKING.) Mix apples, 2/3 cup sugar, cinnamon and nutmeg. Heat 1/3 cup butter and lemon juice in large saucepan. Saute apples until tender, 3 to 5 minutes. Spoon apple mixture into pancake and run it to table. Can be cut into wedges to serve. I cut it with kitchen shears and add a scoop of vanilla or cinnamon ice cream. |
