MEATBALL BISCUIT PIE 
1 lb. ground beef
6 tbsp. dairy sour cream
1/4 c. chopped onion
1 tbsp. parsley
1 tsp. salt
1/8 tsp. pepper
1 (10 3/4 oz.) can condensed cream of celery soup
1 (16 oz.) can sliced carrots
1 (15 oz.) can potatoes, drained and sliced

Heat oven to 450 degrees. Mix beef, 1/2 of the sour cream, the onion, parsley, salt, pepper. Shape into 1 inch balls. Bake in oblong baking dish, 12 x 7 1/2 x 2 inches, until brown - 8 to 12 minutes. Mix soup, remaining sour cream, carrots (with liquid) and potatoes; pour over meatballs. Keep hot in oven.

Prepare rolled biscuits on package of Bisquick mix. Place biscuits and meatball mixture. Bake 15 minutes. Garnish with parsley (4 to 6) servings. P.S. I peel fresh potatoes and slice and cook them (instead of can potatoes).
